Le “formaggelle”, deliziose creazioni della tradizione dolciaria sarda, sono un’autentica esperienza per il palato che vi porterà a scoprire il cuore gastronomico dell’isola. Questi piccoli capolavori dolci sono un inno alla ricchezza dei prodotti locali, in particolare al formaggio, un elemento chiave della cucina sarda.
Le formaggelle sarde o casgiatini in gallura sono un dolce tipico della Sardegna, che possiamo portare sulle nostre tavole a Pasqua.
ingredienti per il ripieno: 2 kg di formaggio o ricotta, 5 uova (2intere e 3 tuorli), 200 gr di zucchero, farina q.b., buccia di limone e di arancia, un bicchierino di sambuca, due bustine di vanillina, un cucchiaino raso di cannella e, se gradita, uva sultanina.
Ingredienti per la pasta: 1 kg di farina, 250 gr di strutto, 100 gr di zucchero, 1 uovo e acqua per impastare.
Preparazione: si dispone la farina a fontana, si aggiungono lo strutto, lo zucchero, l’uovo e poca acqua tiepida salata(è sufficiente un cucchiaino di sale). Dopo aver fatto delle sfoglie lunghe e sottili con l’apposita macchina, si ritagliano dei cerchi al centro dei quali si sistema un po’ di ripieno. Dopodiché si pizzicano ai lati ottenendo la classica forma delle formaggelle.
Si sistemano su un foglio di carta da forno in una teglia e si cuociono in forno caldo a media temperatura per circa 15/20 minuti finchè non diventano dorate.
Curiosità: anticamente le formaggelle venivano preparate per festeggiare la Pasqua e, ancora oggi, malgrado la tradizione non sia più seguita come un tempo, questi dolci sono certamente tra i più apprezzati.
